Elephant Garlic produces enormous bulbs that have fewer cloves and can weigh up to a pound. It has flat green leaves much like leek and a tall flowering stalk. Young leaves can be used like chives, sliced and in a salad or used as a garnish. The flavor of the cloves is milder than garlic and sweeter, more like a cross between onion and garlic. It’s perfect for adding a milder garlic flavor to stews, roast, soups and garlic mashed potatoes. Harvest when several of the stalks turn yellow and dry. Carefully remove the bulb with a spade. Let bulbs dry in a cool shady area for 1-2 weeks.
