This vigorous plant produces a good crop of pickling-type cucumbers. Interiors are solid and crisp, packed in a firm, bumpy, irregularly shaped, pale to dark green cucumber. They are best when harvested between 3-6 inches before the seeds start to develop. You can also pick them smaller for some of the best gherkins you will ever taste.
Besides being the perfect pickle, Kirbys are great as a snack, in salads, or anywhere else you would use cucumbers.
